Family Favorite Pancakes

These are a family favorite, based on pancakes from a fishing lodge we went to through our youth and into adulthood! They a chewier texture than traditional pancakes, similar to Swedish pancakes. We like them with maple syrup, and even rolled around a sausage and dunked in syrup, but they are great with a dust of powdered sugar and a hearty squeeze of fresh lemon, too. Enjoy!

Ingredients:

2 jumbo or 3 large eggs

1 ¼ cups milk

1 cup all-purpose flour

1 tablespoon white sugar

¼ teaspoon baking soda  

Cooking spray or 1 tablespoon butter, or as needed, for griddle 

Directions:

  1. Beat eggs in a bowl with an electric mixer until thick and lemon-colored, 3 to 5 minutes.
  2. Whisk in milk. 
  3. Mix dry ingredients in a small bowl and whisk or sift together. 
  4. Add dry ingredients to eggs & milk, mix with a whisk until smooth, be sure to scrape bottom of bowl. 
  5. Let batter rest while the griddle, or pan, heats up over medium heat, it should thicken slightly. 
  6. Grease griddle with cooking spray or butter, pour about ¼ cup of batter for each pancake. 
  7. Cook until light brown, about 1-2 minutes depending on how hot the griddle is. Flip and cook for 1-2 minutes. Repeat with remaining batter!

Serve with maple syrup, or dust with powdered sugar and a squeeze of lemon juice!
