
These are a family favorite, based on pancakes from a fishing lodge we went to through our youth and into adulthood! They a chewier texture than traditional pancakes, similar to Swedish pancakes. We like them with maple syrup, and even rolled around a sausage and dunked in syrup, but they are great with a dust of powdered sugar and a hearty squeeze of fresh lemon, too. Enjoy!
Ingredients:
2 jumbo or 3 large eggs
1 ¼ cups milk
1 cup all-purpose flour
1 tablespoon white sugar
¼ teaspoon baking soda
Cooking spray or 1 tablespoon butter, or as needed, for griddle
Directions:
- Beat eggs in a bowl with an electric mixer until thick and lemon-colored, 3 to 5 minutes.
- Whisk in milk.
- Mix dry ingredients in a small bowl and whisk or sift together.
- Add dry ingredients to eggs & milk, mix with a whisk until smooth, be sure to scrape bottom of bowl.
- Let batter rest while the griddle, or pan, heats up over medium heat, it should thicken slightly.
- Grease griddle with cooking spray or butter, pour about ¼ cup of batter for each pancake.
- Cook until light brown, about 1-2 minutes depending on how hot the griddle is. Flip and cook for 1-2 minutes. Repeat with remaining batter!
Serve with maple syrup, or dust with powdered sugar and a squeeze of lemon juice!
